Colcannon (Bubble and
Squeak)
Ingredients:
Cold
cooked cabbage and potatoes
Salt
and Pepper
1
tablespoon Butter (or oil)
Method:
1.
Chop
cabbage and mash potatoes
2.
Mix
together and add salt and pepper to taste
3.
Add
butter to a hot frying pan, when melted add the other ingredients
4.
Spread
potatoes and cabbage flat and allow to brown underneath
5.
Turn
and repeat
6.
Serve
with an extra knob of butter for taste
